  • Jonathan Tishbi Special Reserve 2004 - Sde Boker

  • A deeply fruity, elegant and well structured dry red wine, made from Cabernet Sauvignon, Merlot and Cabernet Franc harvested at Sde Boker in the Negev desert. This wine was treated to 24 months aging in small French oak barrels. The wine has a good balance of tannins, spicy wood and black fruit flavors, matched by tobacco and chocolate that lead to a long, lightly minty finish. Alcohol by volume: 14%
    Recommended serving temperature: 18°C

Winemaking: The grapes were harvested in the early hours of the morning and whilst maintaining a low temperature, were transferred immediately to the stainless steel vats on the winery’s premises. After the grapes were left in contact with their skins for two days, specially imported yeast from Bordeaux was added to the temperature-controlled vats. Fermentation of the wine continued for 12 days, the temperature reaching 30ºC on completion of the process. This method of fermentation guarantees the maximum extraction of the grape skins’ color, flavor and aroma together with their tannic qualities. After this procedure, the grapes are then separated from their peel, followed by a malolactic fermentation in new French oak barrels. The wine continues to mature in the barrels for a period of 24 months.

Wine of the year 2008/9 - WAWWJ, the World Association of Journalists and Writers of Wines and Spirits, winner Gold Medal at Central America International Wine Competition, 8vo Panamá Vinos y Licores 2007, Silver medal at the Bacchus 2008 Madrid, Spain. The wine was ranked number 4 in Gary Vaynerchuk’s the "101 Wines" book (most highly recommended wines of the world) and nicknamed by the author as "Jewish Bordeaux".
